I had some extra great northern beans in my pantry, so I thought I’d do a search for recipes that I could use them in and I found this great white bean basil chicken chili. I mean I love every word in that recipe title, so I knew it would be a dish I would devour… and it was!
It’s as simple as putting everything on the ingredient list together, letting it boil, and then allowing it to simmer for about an hour. The wonderful aromas fill the whole kitchen and then the flavors fill you with incredible pleasure. It’s also incredibly filling, so you wont have a hard time feeding everybody, and no one should leave the table hungry.
In our family, it is one of our favorite dishes on a cool day. It’s comfort food at it’s finest, so give it a whirl and let me know what your family and friends think.
Here’s what you need:
1 pound boneless chicken pieces
1 medium onion
2 cloves garlic
1 medium tomato
1 large lime
¼ cup fresh cilantro leaves
1 Tablespoon fresh basil
2 (15½-ounce) cans great northern beans, no salt added
2 Tablespoons canola oil
4 cups low-sodium chicken broth
1½ teaspoons chili powder
1½ teaspoons ground cumin
½ teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon ground black pepper
Optional:
2 teaspoons red pepper flakes
