Everyone loves Chinese food, right! Sometimes I get Sweet and Sour Chicken, but I found this recipe for “Vegetable Sweet and Sour”, and I think I’m going to make it next time we are in the mood for Chinese. It’s loaded with onion, carrots, red pepper, baby corn, and even pineapple chunks! Now, doesn’t that sound delicious! And the best about it…IT DOESN’T TAKE THAT LONG!!!! This recipe is from Nora, who has the site called “Savory Nothings.”
Here is what you’ll need to make Vegetable Sweet and Sour Chicken:
1 teaspoon coconut oil (or any cooking oil)
1 red onion, cut into long strips
1 large carrot, julienned
1 large red pepper, cut into long strips
3 oz baby corn, halved lengthwise
¾ cup pineapple chunks, fresh or canned
1½ cups pineapple juice
2 tablespoons tomato paste
1 tablespoon white wine vinegar
1 tablespoon brown sugar
1 teaspoon cornstarch, dissolved in a bit of water to make a slurry
¼ teaspoon salt
3 oz sugar snap peas, cut into long strips
