I’m always looking for recipes that are different or challenging that will make my friends and family smile, and this one fit the bill. It’s a flourless chocolate cake that you actually put stout beer into. Wait, did I say BEER… in a CAKE?? WHAT?! I sure did, but don’t worry, it’s just for flavor. The alcohol gets pretty much cooked out when its done similar to, say, penne alla vodka. So don’t worry about letting your kids try a bit.
You also use turbinado sugar, which is otherwise known as sugar in the raw. If you really didn’t want such a challenge you could just make your favorite chocolate cake and then just make the meringue, but if you’re feeling adventurous I think you should go for it. The cake has a great chocolatey moist flavor and the meringue is a great compliment. The cake and the meringue aren’t the easiest recipes, so expect to take some time with each, but the results are really terrific. For the cake:
2 1/2 sticks unsalted butter, cut into pieces, plus more for the pan
6 ounces bittersweet chocolate, chopped
6 ounces unsweetened chocolate, chopped
6 large eggs
3/4 cup turbinado sugar
Pinch of salt
1/2 cup stout beer (such as Guinness)
1 teaspoon vanilla extract
For the meringue:
2 ounces semisweet chocolate, chopped
2 tablespoons unsalted butter
1 tablespoon light corn syrup
1 cup granulated sugar
3 large egg whites
1/4 teaspoon cream of tartar
Pinch of salt
2 teaspoons vanilla extract
