Model Chrissy Teigen tweeted about this awesome Carrot Cake Recipe, which she found by Googling “Best Carrot Cake Ever”. In that tweet, she was convincing enough of her love for this wonderful cake (which includes pineapple and coconut along with the grated carrots) that People Magazine shared her thoughts and the recipe on GreatIdeas.People.com (the recipe originally appeared on MyRecipes.com as shared by Southern Living). According to People:
The cake, which is a recipe from Southern Living, stands out from others because in addition to the obvious shredded carrots, the cake batter is bolstered with crushed pineapple and shredded coconut. Once baked, each layer topped with a caramelized buttermilk glaze and frosted with the classic cream cheese icing.

Cake:
2 cups all-purpose flour
2 tsp. baking soda
½ tsp. salt
2 tsp. ground cinnamon
3 large eggs
2 cups sugar
¾ cup vegetable oil
¾ cup buttermilk
2 tsp. vanilla extract
2 cups grated carrot
1 (8-oz.) can crushed pineapple, drained
1 (3 ½-oz.) can flaked coconut
1 cup chopped pecans or walnutsButtermilk Glaze:
1 cup sugar
1 ½ teaspoons baking soda
½ cup buttermilk
½ cup butter or margarine
1 tbsp. light corn syrup

Have this same old school recipe in my mommas cookbook from way back in the day! BEST carrot cake recipe ever!! Don’t scoff at it having pineapple until you try it!!! Mmm the memories… lol I’m pushing hard at 50 if that gives ya any idea how far back this recipe goes…mom got it from her momma… lol enjoy Y’all!!!
