This recipe, Teriyaki Chicken and Snow Pea Stir-Fry, comes to you from the Weight Watchers Cook it Fast cookbook. This cookbook has meals that are 15, 20 and 30 minute meals – which is great for working mothers. How would like to be eating Maple & Chili-Broiled T-Bone Steaks (15 minute)…. Here is what you’ll need to make Teriyaki Chicken & Snow Peas Stir Fry:
2 tsp. Asian (dark) sesame oil
1 lb. skinless boneless chicken breast, cut into thin strips
2 garlic cloves, minced
1 (1/2 inch) piece fresh ginger, peeled and minced
1 red bell pepper, thinly sliced
4 scallions, thinly sliced
1 (5 0z.) can sliced water chestnuts, drained
6 oz. snow peas, trimmed
1/4 cup reduced-sodium chicken broth
1/4 cup teriyaki sauce
Pinch red pepper flakes
2 cups hot cooked brown rice
