Well, you might remember I posted a fantastic recipe for Banana Split Cake Mix Cookies not too long ago (click here for that recipe). Those cookies were made from Funfetti Cake Mix, and had instant banana pudding, semi-sweet chips and chopped maraschino cherries mixed into them. They were very good and easy for a cake mix cookie.
But these cookies popped up last week, called Super-Soft Sprinkle Pudding Cookies, and the only thing they have from a box is instant vanilla pudding, if you would like to try them out…by all means please do!
Here’s what you need:
¾ cup butter
1 cup granulated sugar
1 egg, plus 1 yolk
1 teaspoon vanilla
1 teaspoon baking soda
½ teaspoon kosher salt
1 (3.5-ounce packet instant vanilla pudding mix)
2 cups flour
½ cup sprinkles
These cookies you don’t want to over-bake…because you want them to be super soft cookies. Once they are baked, let them cool on the baking sheets for 3 minutes, and let them cool on wire rack completely.
