I have loved the Sugar Solution Cookbook for years! This recipe, Super-Easy Barbecue Pulled Pork, is one of 200 delicious recipes to balance your blood sugar naturally. I have made this recipe for my family so many times…and my son still doesn’t know that I got this recipe from this cookbook. See, there’s this misconception about healthy foods that, if it’s healthy, it doesn’t taste good and that if something tastes good, it can’t be healthy. That misconception is the primary thing that makes diets so difficult to get into. That’s why I love this recipe, as well as this book, above all others! There’s nothing better than eating healthy without even realizing it! It’s also super easy! Once the pork loin is done browning, then all the rest of the ingredients go in. Here is what you’ll need to make Super-Easy Barbecue Pulled Pork:
1 Tbsp. olive oil
1 ½ Lbs. boneless pork loin, trimmed of all visible fat
1 medium onion, chopped (about ½ cup)
2/3 cup ketchup
1 Tbsp. cider vinegar
1 Tbsp. molasses
2 tsp. packed brown sugar
2 tsp. mustard powder (I don’t like mustard, so I didn’t use)
1 ½ tsp. garlic powder
1 tsp. Worcestershire sauce
¼ tsp. ground black pepper
1 ½ cups lower-sodium chicken or vegetable broth
