I always have bananas on my kitchen counter. By the time I get to the last 2 banana’s they are already starting to get brown and soft. And that’s when I usually throw them away in a day or two. But NOT SO FAST! Don’t make that mistake! There’s still plenty you can do with them, even if they ARE a little… unsightly.
Not only can you make these awesome Peanut Butter Banana Cups I posted a while ago (Click here for that recipe!) but you could also make this creamy concoction as well! This Soft-Serve Mango-Banana Sorbet is the perfect way to keep your mind off this terrible heat! Best of all though, my husband and I could have something refreshing and BOOZY (for adults ONLY) to have after dinner.
Here’s what you need:
2 (16-ounce) packages frozen mango chunks, broken apart
1/3 cup sugar
1 (4-ounce) very ripe banana, sliced
1/3 cup fresh lime juice
3 tablespoons tequila or light rum
1/4 teaspoon salt
You can make this sorbet WITHOUT the booze so the whole family can enjoy it as well if you like… But I’ll leave that up to you!
