I never thought that you could make Potatoes in a slow cooker. Who would have thought…definitely not me!!!! Cook the bacon; drain, then this goes on top of the potatoes. But first put the potatoes in the cooker, then beat the cream cheese…see recipe. Then you add the bacon on top; then cook 7-8 hours; then top with green onions. WOW, this sounds great!! I bet it ever taste great too!! I would like to thank Lynn Ireland and Taste of Home for making this delicious dish. This recipe needs to be put on your list of Summer Time Meals!
Here is what you’ll need to make Slow-Cooked Ranch Potatoes:
6 bacon strips, chopped
2-1/2 pounds small red potatoes, cubed
1 package (8 ounces) cream cheese, softened
1 can (10-3/4 ounces) condensed cream of potato soup, undiluted
1/4 cup 2% milk
1 envelope buttermilk ranch salad dressing mix
3 tablespoons thinly sliced green onions
I’ve put potatoes in a slow cooker before, but usually along with something else, like chicken or beef. I’ve never tried putting only potatoes, but if those other dishes are any indication, these should come out of the slow cooker with an excellent texture and flavor that you simply can’t get any other way!
