It’s summer time!! What does that mean? Well, it means a lot of SALADS will be eaten!… Or maybe that’s just me. Anyway, here’s one salad the has bacon and shrimp in it…so you don’t deprive yourself of the “good stuff” that much. You have to broil the shrimp with the first 5 ingredients. When that’s done you cook the bacon till its crisp…then chop it up. Next the dressing gets made…mix it up…toss on salad with the shrimp, bacon and tomatoes…and there you have it, your shrimp BLT! Here’s what you’ll need to make Shrimp BLT Salad:
1 tbsp. paprika
1/2 tbsp. garlic powder
1/2 tsp. plus a pinch cayenne
kosher salt
Freshly ground black pepper
1 lb. large shrimp (peeled and deveined)
4 slices thick-cut bacon
3 tbsp. extra-virgin olive oil
Juice of 1 lime
Pinch of sugar
1 head romaine, chopped
1 c. cherry tomatoes, halved
