It’s summer time, and that means IT’S TIME FOR COOKOUTS! Even in this heat, nothing beats a good cookout! Of course, you gotta have the usual stuff– grilled chicken, hot dogs, burgers… you name it. Most people also bring/make potato salad or coleslaw too, but not in my family! My husband and son both HATE mayo, so anything with that in it doesn’t come within a 100 foot radius of our table. So we tend to be a little more adventurous with our side dishes. This recipe should be PERFECT!
My family LOVES Asian food, which I am certain has no mayo in it…so they WILL LOVE this Sesame Pasta Chicken Salad. This pasta salad has light soy sauce, rice vinegar and sesame oil which is why it’s perfect for me to make. It’s a very simple dish. It’s also the perfect compliment to all the other picnic mainstays. You should give this a try!
Here’s what you need:
1/4 cup sesame seeds
1 (16 ounce) package bow tie pasta
1/2 cup vegetable oil
1/3 cup light soy sauce
1/3 cup rice vinegar
1 teaspoon sesame oil
3 tablespoons white sugar
1/2 teaspoon ground ginger
1/4 teaspoon ground black pepper
3 cups shredded, cooked chicken breast meat
1/3 cup chopped fresh cilantro
1/3 cup chopped green onion
