My mother made artichokes quite often, but she always made them in a big sauce pot on the burners. So I’m really looking forward to trying these Baked Stuffed Artichokes! I never had them baked (not that I know of). You cut the bottom and tips from the artichokes; then with a small metal spoon (this is new to me) scrape and scoop out all of the INNER FUZZY CHOKE. At that point you fill with the stuffing mix. This step is what you have to do in order to BAKE THE ARTICHOKES, then cover with foil, pierce the foil with a sharp knife, and bake for 50 minutes to 1 hour 20 minutes, depending on size. Here is what you’ll need to make Baked Stuffed Artichokes:
2 large globe artichokes
4 slices lemon
1 teaspoon lemon zest
3 cups fresh breadcrumbs (from 6 slices white bread)
1/2 cup grated Parmesan cheese
1/2 cup chopped parsley
6 cloves garlic, minced
1 teaspoon fresh oregano, minced
1/2 cup plus 2 Tbsp olive oil
1/8 teaspoon black pepper
1 bay leaf
2 slices lemon
2 cloves garlic, halved
It’s hard to describe artichokes to someone who has never had one. But once you do, you will know where my LOVE for them comes from! It’s hard to believe that I was scared of them when I was a kid!
