Sometimes it’s hard to find a vegetable that the whole family will enjoy, especially younger kids, but with this recipe I think you’ll find a dish that they’ll ask for time and time again! Cauliflower is sometimes an over looked vegetable. Most people don’t find it appealing because it does have somewhat of a boring taste. Can’t really argue with that, I’m not much of a fan myself.
The thing about cauliflower is that you can really do a lot with it if you’re willing to be creative. Like this is a recipe that I found recently, it’s from Rachael Ray and I think it’s a keeper! There’s no boiling or steaming of the cauliflower. You’re actually going to bake the cauliflower, for only about 15 minutes, which is easy. The bread crumbs and the sauce add such great (and much needed) flavor to this normally boring vegetable, it’s really incredible. There’s a good chance, for once, you may not have any vegetable left overs. Sounds good to me!
Here’s what you need:
2 large heads cauliflower
3 tablespoons extra virgin olive oil (EVOO)
Salt and black pepper
1 cup ricotta cheese
For the topping:
2 tablespoons extra virgin olive oil
3 tablespoons butter
1 garlic clove, grated
1 lemon, zested, reserve the lemon for squeezing for juice for garnish
2 tablespoons parsley, chopped
1 cup breadcrumbs
For the sauce:
2 tablespoons butter
4 tablespoons flour
2 cups milk
Salt and black pepper
Freshly grated nutmeg
