This Ricotta Cake Recipe goes back 25 Years. My sister, Betty Lou had made it for a birthday party and it was so delicious, I thought that I would share it with you. And believe me, it was as delicious then as it is now! You use a yellow super moist cake mix with PUDDING IN THE MIX and 2 lbs. of ricotta cheese to make this fantastic cake.
Here’s what you need:
Yellow cake mix (super moist with PUDDING IN THE MIX)
1 ¼ cups water
1/3 cup vegetable oil
3 eggs
2 Lbs. ricotta cheese
3 Tbsp. sugar
3 eggs
All you do is mix the batter and lay it in a 13 x 9 inch pan. Then mix the ricotta with other ingredients, then pour in onto the batter (make sure the ricotta COMPLETELY COVERES the batter).
The cake is baked (350F for 40 minutes), and when the cake comes out you don’t see the ricotta, because it is all covered by the cake. And believe me, it is so moist and delicious.
