At the age of 17, my cousin had taken me to Manhasset, Long Island for lunch. But while he was driving, I couldn’t believe the sites of this RICH TOWN (lots of MONEY RICH). I was so used to seeing houses that were (to me) normal, in other words, SMALL!!!. But these were EXTREMELY LARGE…just by the looks of the town I knew that to LIVE there, you had to HAVE MONEY!!!!!!
When we got to the restaurant (LA CREPE, I think that’s how you spell it), I knew by looking at the cars in the lot…the people in the restaurant…the wait staff with white gloves on and they had French accents…I knew that we didn’t belong there.
My cousin ordered for me, and I wasn’t sure I would like the FRENCH ONION SOUP AND QUICHE LORRAINE. But it was unbelievable…the soup was in LARGE (almost like a bowl) dish, with tons of Swiss cheese melted on top…and it was so good that, to this day, no one comes close to their French Onion Soup.

1/2 cup unsalted butter
2 tablespoons olive oil
4 cups sliced onions
4 (10.5 ounce) cans beef broth

4 slices provolone cheese
2 slices Swiss cheese, diced
1/4 cup grated Parmesan cheese
