It’s July 4th! I sure hope everyone is having a great Independence Day! I found a wonderful recipe to help you show your delicious patriotism, and I know what you’re probably thinking: “it’s already the 4th, my party is only a few short hours away. There’s no time!” Not quite, because when all’s said and done, you can make these awesome sugar cookies in just about 30 minutes, maybe not with the icing, but that would depend on you. These cookies couldn’t be simpler to make. All you need is:
1 1/2 cups butter, softened
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt

NOTE: I make icing with confectioners’ sugar and milk. I make it fairly thin, as I ‘paint’ the icing on the cookies with a pastry brush. Thin enough to spread easily but not so thin that it just makes your cookies wet and runs off.
I decided to add that little tidbit because the recipe itself doesn’t seem to mention it. However, this cookie can be made with or without it, that’s up to you. If you would still like to make these cookies and you don’t have a ton of time on your hands, the plain version is perfectly fine.
