Did you ever go into a bakery and just stare at all the delicious cookies there are? Well, now is the time to try to make one of my favorite cookies, the “Rainbow Cookie”. I found the recipe on Food Network, so I thought I would give it a try. My first batch wasn’t my best, so I tried another batch. And it was worth the wait, so try to make these Rainbow Cookies for yourself, hopefully on your first go!
Here is what you’ll need to make Rainbow Cookies:
2 1/2 sticks unsalted butter, cut into pieces and softened, plus more for the pans
2 cups all-purpose flour, plus more for the pans
8 ounces almond paste
1 cup sugar
4 large eggs, separated
1/2 teaspoon kosher salt
Red and green food coloring (gel preferred)
1 15 -ounce jar smooth apricot jam
Cooking spray
1 pound bittersweet chocolate, chopped
