This summer the weather has been a mixture of cool, somewhat warm, hot and rain, and sometimes it all in ONE DAY. There have been days that it has been IMPOSSIBLE to plan a BBQ, because you don’t know what the weather will be at dinner time. So I cook mostly on my stove or oven and then, if it’s nice out, I plan to eat outside. Lately, I’ve been looking for recipes other than chicken, and I found this dish “Pork Chops with Shallots”, it came from the Food & Wine magazine and has shallots, anise seeds, dry red wine, chicken stock and tomato paste…not only does it sound delicious…but looks delicious, too.

Here is what you’ll need to make Pork Chops with Shallots:

Four 8-ounce bone-in pork rib chops
Salt and freshly ground pepper
All-purpose flour, for dusting
2 tablespoons extra-virgin olive oil
1 tablespoon unsalted butter
4 large shallots, sliced (1 1/2 cups)
1/4 teaspoon anise seeds
1/2 cup dry red wine
1 cup chicken stock
1 teaspoon minced garlic
2 teaspoons tomato paste
