I just love these “Pina Colada Macaroons”, they are the best! This recipe is from Annette’s Sweet Treats. It’s made with softened cream cheese, chopped candied pineapple and of course coconut. You mix the cream cheese until fluffy; then with the other ingredients until it’s time to add the pineapple and coconut. When you roll dough into balls, that’s when you add the extra coconut on top of each cookie. My mouth is watering just telling you the directions. I really LOVE these macaroons; thanks to Pillsbury for doing such a great job!
Here is what you’ll need to make Pina Colada Macaroons:
¾ cup sugar
1/3 cup margarine, softened
3 oz. pkg. cream cheese, softened
1 ½ tsp. rum extract
1 egg yolk
1 ¼ cups flour
2 tsp. baking powder
¼ tsp. salt
8 oz. candied pineapple, finely chopped
4 cups flaked coconut
