Making homemade macaroni and cheese is a dish I learned from my mom. Whenever I eat it I feel the warmth of home. It’s an easy dish, which I love, and it’s one of those meals that’s warm and filling and makes you just want to put up your feet and watch a good movie with your family.
I’ve always made the dish the same way, but then my daughter came across this recipe and we thought we’d give it a try. I never ate artichokes when I was young, but as an adult they are one of my favorite vegetables, and spinach is always good too, so this recipe had to work for us. It’s cooked mainly on the stove, but you will put it in the oven for seven minutes to bake it to perfection. I’m telling you it is WONDERFUL! I’d love to hear what you think.
Here’s what you need:
2 Tbsp. butter
2 cloves garlic, minced
5 oz spinach
1 cup artichoke hearts, drained
3 cups milk
2 tsp kosher salt
2 tsp freshly ground black pepper
2 cups elbow macaroni
¾ cup shredded cheddar cheese
3 cups shredded mozzarella cheese

However, I feel I should add that this dish is a tad salty, if you are sensitive when it comes to salt or your diet simply doesn’t allow for it (like my husband) feel free to cut back on it a bit.
