Graduation parties, bridal showers, and backyard barbeques are just some of what summer is all about and I am constantly looking for something simple and special to bring with me to each get together. These cheesecake Stuffed Strawberries should do nicely! This recipe is so easy and yet unbelievably popular you have to try it, just make sure you make plenty. Last time, I think I ate half of them before they got to their destination, they are THAT GOOD!
The list of ingredients, as you can see, isn’t complicated:
24 large strawberries (approx. 2 lbs)
1 (8 oz.) block of light cream cheese, held at room temperature for about 1 hour
1/2 cup confectioner’s sugar (icing sugar, powdered sugar)
1 tsp. vanilla extract
Mini chocolate chips, optional
You’re going to love how easy these filled strawberries are to make and how delicious they are to boot! It’s like eating a pie but without the crust and no baking involved either is a MASSIVE plus! You can change the topping too. Blueberries would make a great red, white, and blue treat for the 4th of July or just crumble a tasty cracker on them like graham or cinnamon or a tasty idea is to shred some chocolate on top. They’re pretty, easy to make, and so hard to resist.
