Well, summer has arrived and it was 87 degrees today. It’s time for something cool, like this Melon Icebox Cake that Better Homes and Gardens has on their site. This seems to be something you would have in the tropics, because one of the flavors of gelatin is Tropical Fusion (we can dream…can’t we?). You line-up the melon balls on top of the graham cracker crust, then carefully pour the gelatin mixture atop the balls. Sounds easy to me!! Then cover and chill. I can smell the beach air already!
Here is what you’ll need to make Melon Icebox Cake:
1 1/2 cups graham cracker crumbs (21 squares)
5 tablespoons butter, melted
1 3 ounce tropical fusion, melon fusion, apricot, or desired-flavored gelatin
1 envelope unflavored gelatin
1 cup boiling water
1 1/2 cups white grape juice, chilled
1 ounce package cream cheese, softened
1/2 8 ounce container frozen extra creamy or regular whipped dessert topping, thawed
1 1/2 cups 1/2- to 1 1/2-inch melon balls (honeydew and/or cantaloupe) (optional)
Toppers such as watermelon balls or wedges, cantaloupe ball and/or honeydew balls (optional)
This super tasty dessert should help melt the heat away. Also, you just can’t beat fresh fruit! None of that fake stuff here! Well, mostly. For the full instructions, head over to Recipe.com now. Enjoy!
