The first time I made spaghetti squash was just a few years ago and I fell in love instantly. I can’t believe I waited that long to try it and if you have never had it, I suggest you give it a try because it really is great!
It looks and tastes just like regular spaghetti, but it’s so much better for you. This recipe takes the spaghetti squash to a new level though. Even if you’ve never made spaghetti squash before, you’re going to love it! It takes about 45 minutes to an hour to prepare and then once it cools down you shred the squash with a fork and that’s when you’ll see it turn into this wonderful spaghetti.
Once you have the sauce made up, you’ll add it to the squash and cook it all for just about ten minutes more to melt the cheese. When you serve everyone their own half of squash filled with delicious spaghetti you’ll see smiles on everyone’s faces. That might actually be the best part!
Here’s what you need:
1 spaghetti squash
1 lb ground beef
Half a green pepper, diced
1 onion, diced
3 garlic cloves, minced
1 portobello mushroom, halved and sliced
1 (28 oz) can diced tomatoes, drained
Salt and pepper
1/4 tsp. dried thyme
1/2 tsp. dried oregano
1/4 tsp. cayenne
Parmesan cheese
