Reuben sandwiches are one of my favorites, so when I ran across this recipe for a Cuban Rueben, you know I had to try it!
For one, the pork is first cooked slowly for about 8 hours in a crock pot and it fills your whole house with incredible aromas that are mouthwatering. Second, all the ingredients that go into this recipe go perfectly with the pork and make such a tasty meal it will definitely end up in your recipe files to make again. These two steps are exactly what you need to make the perfect Reuben.
You do need to refrigerate everything overnight, so this meal does technically take two days to complete, but with most of the work done the first day, it makes for an easy day when you put it all together. Trust me, it’s ALL worth it! These sandwiches are really wonderful, your family will be thrilled when you serve them!

1 (4-pound) bone-in pork butt
3 cloves garlic, sliced
2 tbsp. brown sugar
2 tbsp. chili powder
1 1/2 tsp. cayenne pepper
kosher salt

1 medium carrot, peeled and cut into 2-inch pieces
1 medium onion, thinly sliced
1 celery stalk, chopped
1 small parsnip,peeled, cored and cut into 2-inch pieces
1 can (28 ounces) whole tomatoes
3 to 4 c. low-sodium chicken broth
2 c. sauerkraut
1 to 2 tbsp. sriracha
2 tbsp. olive oil
12 slice rye bread, toasted
6 slices provolone
Pickles, for serving
