I’m always looking for quick dishes and ones that include little clean up go on top of my list. This recipe is all done in one skillet on your stove top and then you cook and eat. That’s it!
If you love sausage you’re going to love this dish! If you don’t cook sausage often, you’re still going to love this dish and end up making it on a regular basis. It’s THAT good! You can also use your choice of meat which is always a plus. I’ve done chicken and pork and they have both turned out wonderfully. Here’s what you need:
1 Tbsp extra virgin olive oil
1 lb basil chicken sausage (any sausage can be used)
½ sweet onion, chopped into ½-inch pieces
1 lb red potatoes, chopped into ½-inch pieces
2 garlic cloves, minced
1 pint cherry tomatoes, sliced in half (divided)
1 Tbsp chopped rosemary
1 Tbsp chopped basil
½ tsp kosher salt
½ tsp fresh ground black pepper
