Well, it’s HOT outside!… again… the temperature was close to 96 degrees– in the shade. I’ve had it with the heat, because when it’s THIS hot, you have no clue what to make for dinner. Just THINKING about turning on my oven makes me sweat!
Tell me if this sounds familiar: You had stopped off at the supermarket on your way home from work. You picked up some fresh shrimp…chicken…broccoli…watermelon…milk and some other odd and ends. It’s 4:40 PM and your husband should be home at 6:15, which doesn’t give you much time to decide what to make.
I remember seeing a recipe idea for Grilled Watermelon and Shrimp Skewers somewhere so I think I’ll make that for dinner.
So I’ll start by making a salad; I have cucumber’s…tomato’s…carrots…walnuts…raisins…that should be enough add-ins for the salad. I have the salad dressing that should go in the fridge. Next, I’ll start making the watermelon and shrimp skewers.
Here’s what you need:
1/3 cup plus 1 1/2 tbsp. extra-virgin olive oil
Zest of 1 lime
3 tablespoons lime juice
1 tablespoon chopped fresh mint, plus 1/4 cup mint leaves, torn
1/2 teaspoon chopped fresh thyme leaves
1/4 to 1/2 tsp. red chile flakes
1 garlic clove, minced
1 1/4 teaspoons kosher salt
1/2 teaspoon pepper
1 pound jumbo peeled and deveined shrimp (21 to 26 per lb.), thawed if frozen
1/2 small seedless watermelon (about 2 lbs.)
My husband got home right on the button (6:15 pm), and started the grill at 6:40; and dinner was excellent!
