We love making pancakes in my house. We have them for breakfast and at times even dinner. Fresh pancakes are such a simple guilty pleasure to indulge in, so when I saw this recipe for Grandma’s Gingerbread Pancakes, they sounded so good, I made them the next morning.
It’s a basic pancake recipe, (or you could just use your favorite recipe) but you add ginger, cinnamon, and molasses. What you get is the perfect pancake for the holiday season. The whole house smells like the holidays when you’re finished. I’m going to make these pancakes for my family’s Christmas morning along with danish, bacon, and many other wonderful breakfast treats. It’s gonna be a special day!

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt

1 teaspoon ground cinnamon
1 egg

1/4 cup molasses
1 1/2 cups water
