Sweet potatoes to me are one of those perfect foods.  So delicious by themselves and so easy to add to recipe to create wonderful sides, meals, and desserts.  I know when you see sweet potato casserole, it makes you think of Thanksgiving, but why should you have to wait a couple of months to enjoy something so delicious?

Regular potatoes are great, but it’s nice every once in a while to have something different, something sweeter.  This casserole was one I found during one of my searches, and it is so good. The best part tho, is that its a gluten free recipe. So whether or not that’s your thing, it really doesn’t matter! This recipe is for everybody! And believe me, you wont even notice the difference! It really is an easy recipe, though it will take a little time to thicken up the egg mixture, so you will have to stand at your stove top for a little bit, but it’s so worth it.

Here’s what you need:

5 egg whites
⅔ cup honey
¼ tsp cinnamon
dash of vanilla
Filling
6-8 sweet potatoes, baked until soft
¼ cup butter or coconut oil
dash of salt
