Thank God the weather is going to be in the low 80’s this week, it so refreshing to wake up to the COOL BREEZE. Seriously, it’s about time I can walk outside and go more than five steps without regretting my decision. It’s the type of weather that you don’t mind cooking your family’s meal…and today, I chose to make Garlic Basil Chicken with Tomato Butter Sauce. How AWESOME does that sound?
Here’s what you need:
1 lb. boneless skinless chicken breasts
salt and pepper
¼ cup olive oil
5-6 roma tomatoes, diced
3 cloves garlic, minced
one handful fresh basil, loosely packed, cut into ribbons
¼ cup LAND O LAKES® European Style Super Premium Salted Butter
8 ounces pasta, like spaghetti, linguine, or bucatini
Go out to your garden and get your ripe tomatoes…and cut a handful of basil into RIBBONS, and believe me IT WILL BE AMAZING!
Cook the chicken to a nice browning on the outside; set aside. Simmer tomatoes…add garlic and butter…add chicken so it soaks in the sauce…stir in basil…top with linguine with chicken and sauce.
And your meal is waiting for you to take your first bite…oh this is heaven!
