I’m always looking for a good side dish to make a dinner special and this recipe is just perfect! When I first looked at it, it reminded me of when I was young, and my mom would take left over mashed potatoes and fry them in a pan to serve as a side with our lunches.
This recipe is NOT for left overs though, you actually use fresh small red potatoes that you cook and then smash so you can brown them on both sides. You then melt cheese on the top too for some extra flavor, which is always a good thing. What’s great is you really can do your own thing, so if you don’t want cheese you can top the potatoes with pretty much whatever you want. Let’s see what you come up with, I’d love to hear everyone’s take on this!
Here’s what you need:
12 small red potatoes (1-1/2 to 2 inches in diameter; 1-1/2 to 2 pounds total)
1 teaspoon salt
1/4 cup olive oil
3/4 teaspoon salt
1/2 teaspoon ground black pepper
3/4 cup freshly grated Parmesan cheese
2 tablespoons finely chopped fresh Italian (flat-leaf) parsley
