These Frostbite Cookies are calling my name…they sure look delicious! I can’t wait to make them; I’m like a little kid when it comes to a NEW COOKIE. New recipes make me feel like a kid on Christmas… which is a good thing, too, because these cookies are PERFECT for Christmas!
They are made with old fashioned oats and corn flakes along with other ingredients. But the best part of these cookies will be when you melt the vanilla almond bark with shortening, then stir in peppermint extract and dip the bottom side of the cookie into this mixture. OMG, you’re in for a delectable treat! You can also put Wilton red and green paste food coloring to make them more festive…BUT it won’t go with the name… FROSTBITE COOKIES.
Here’s what you need:
1 cup vegetable shortening3/4 cup sugar3/4 cup light brown sugar2 eggs1 teaspoon vanilla2 cups all-purpose flour2 teaspoons baking soda1 teaspoon baking powder1/4 teaspoon salt1 1/2 cups old fashioned oats1 1/2 cups cornflakes12 ounces vanilla almond bark1 1/2 tablespoons vegetable shortening1/2 teaspoon peppermint extract (optional)
