These Frostbite Cookies are calling my name…they sure look delicious! I can’t wait to make them; I’m like a little kid when it comes to a NEW COOKIE.  New recipes make me feel like a kid on Christmas… which is a good thing, too, because these cookies are PERFECT for Christmas!

They are made with old fashioned oats and corn flakes along with other ingredients. But the best part of these cookies will be when you melt the vanilla almond bark with shortening, then stir in peppermint extract and dip the bottom side of the cookie into this mixture. OMG, you’re in for a delectable treat! You can also put Wilton red and green paste food coloring to make them more festive…BUT it won’t go with the name… FROSTBITE COOKIES.

Here’s what you need:

1 cup vegetable shortening
3/4 cup sugar
3/4 cup light brown sugar
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups old fashioned oats
1 1/2 cups cornflakes
12 ounces vanilla almond bark
1 1/2 tablespoons vegetable shortening
1/2 teaspoon peppermint extract (optional)
