I love eating apples, but one thing, for me, is that they have to be somewhat soft and juicy. And I can eat 2-3 a day with no problem. Yet I STILL have to see my Doctor from time to time… go figure.
So when I had seen this recipe for Double-Apple Chicken, I knew that I had to try it… that is after I write about it. I’m always making chicken, and if I could make it taste more appealing, I think my family wouldn’t mind eating CHICKEN AT ALL. This dish has apple slices that are placed on the BBQ grill and are cooked until they appear a little-soft…so let’s start cooking!
Here’s what you need:
4 skinless, boneless chicken breast halves (1 to 1-1/4 pounds total)
1/4 teaspoon salt*
1/4 teaspoon ground black pepper
1/4 cup apple butter
3 tablespoons cider vinegar
1 tablespoon canola oil
3/4 teaspoon apple pie spice
2 apples, cored and cut into 1/2-inch-thick rings (about 8 slices total)
Arrange chicken on the grill over a drip pan…you combine the apple butter mixture…it then goes onto the chicken and on the apple slices…cook…then serve.
