I found this awesome pie recipe today that just sounded so good to me, that I had to try it. Before we look at the pie though, there’s one ingredient that is essential and we need to discuss.
I don’t know if you have ever used this product, but I just discovered it recently and I honestly don’t know how I have lived without it for so long; that’s right, it’s cookie butter! If you haven’t tried it, DO IT, it is amazing! It’s butter that you can buy or make in your own kitchen with cookies from scratch. Cookie butter is so good that you can eat it on crackers, pretzels, and more and it is simply delicious. It’s VERY rich tho, so It probably isn’t the best idea to eat it right out of the jar with a spoon like you would with peanut butter, just fair warning. For the crust:
-30 Biscoff cookies
-4 Tablespoons melted unsalted butter
For the filling:
-1 cup whipping cream
-1 (8-ounce) package cream cheese, softened to room temperature
-1 cup cookie butter, plus a few extra tablespoons for topping
-¼ cup powdered sugar
-¼ teaspoon salt
