If you’re looking for something different to bring to a party, this recipe is one you really should give a try!
Chipolte is good, pork is good, Italian sausage is good, and meatballs… everyone likes meatballs, so you won’t go wrong with this one. I think the real reason I tried this recipe, other than that I love meatballs, is the fact that you use cookies in this recipe. WHAT?! That’s right, cookies. Crushed gingersnaps really give this appetizer a great taste and the chili, chipotle, and other ingredients really combine well to make meatballs like you have never had before, and that everyone will come back for time and time again. If there are no parties in your near future make them anyway, you will be glad you did!
Here’s what you need:
1/2 pound ground pork
1/2 pound sweet Italian sausage, casings removed
1 large egg, lightly beaten
3 scallions, finely chopped
Kosher salt and freshly ground pepper
1 1/2 cups finely crushed gingersnaps (about 20 cookies)
2 tablespoons extra-virgin olive oil
1/2 large sweet onion, chopped
3 cloves garlic, chopped
1 poblano chile pepper, seeded and chopped
2 tablespoons chili powder
1 14 -ounce can fire-roasted diced tomatoes
1 tablespoon Worcestershire sauce
1 1/2 teaspoons packed light brown sugar
1 1/2 cups low-sodium chicken broth
1 tablespoon chipolte hot sauce
