For the longest time I heard of this wonderful meal that every one was raving about called chicken and pancakes. An odd combination, to be sure. The first time I heard it mentioned I thought it sounded weird.  Why would anyone eat pancakes with chicken? It didn’t sound like it would be very good.  Well, I recently found out I was wrong and this is the recipe that decided it for me.  I couldn’t go without trying this meal, so my daughter and I decided to give it a try.  Pancakes were never a meal I took anytime making.  Usually I used a mix from the store, but I tried this cornmeal pancake recipe and OMG they are amazing! Plus the spicy maple syrup recipe makes the meal, so don’t skip it.  Give it a try and enjoy, your family will thank you!

Here’s what you need:

    1 3/4 c. yellow cornmeal, spooned and leveled
1 1/2 c. all-purpose flour, spooned and leveled
4 tsp. sugar
1 1/2 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. Kosher salt
2 1/4 c. Buttermilk
3 large eggs
1/4 c. Buttermilk

1/4 c. unsalted butter, melted, plus more for griddle
Crispy Chicken Fingers
2 1/2 c. all-purpose flour, spooned and leveled
3 3/4 tsp. baking powder
1 1/2 tsp. onion powder
1/2 tsp. cayenne pepper
2 tsp. Kosher salt
1 tsp. Freshly ground black pepper
1 1/2 c. Buttermilk
1 1/2 lb. chicken tenderloins
6 to 9 c. canola oil
Spicy Syrup
1 c. pure maple syrup
1 tsp. Tabasco hot sauce
1/2 tsp. Freshly ground black pepper
1/4 tsp. Kosher salt
