It’s pumpkin season, so of course I’ve been searching for new recipes to use pumpkin in. Pumpkin is one of my favorite things, so this time of year, I tend to have plenty of it around– usually more than i could ever need… Some people might say I have a problem, but I don’t care, I LOVE IT!
This recipe for pumpkin scones is so tasty! It’s the perfect way to use up some of my stockpile! Most of the ingredients are basic ones that I’m sure you already have in your pantry, and then you will also need some pumpkin puree, buttermilk and toasted pine nuts. It’s not so bad really.
I don’t know if you’re a big scone eater, or if you’ve ever made your own scones, but this recipe is one that you should try regardless. These scones turn out so moist and sweet, I know you will love them! Give them a try and let me know what you and your family think.
Here’s what you need:
1 3/4 cups all-purpose flour
1/4 cup white sugar
1 tablespoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons cold, unsalted butter, cut into pieces
1/2 cup pumpkin puree
1/3 cup buttermilk
1/3 cup toasted pine nuts
2 tablespoons all-purpose flour, or more as needed
1 egg
1 teaspoon milk
1 teaspoon white sugar
