SO much to love in this dish! I’m not even sure where to start! Right off the bat, I’m a huge fan of chicken & rice. It’s a great combo to be sure. Whether it’s Mexican or Chinese, or any other international variation, it’s just awesome! Then you add cheese which gives the rice a really interesting texture. Then there’s broccoli for some color and a much needed CRUNCH, depending on how you like it that is. And is there something I’m forgetting?… OH YEAH, BACON!!! Need I say more? Here is what you’ll need to make Cheesy Chicken, Bacon, Broccoli and Rice:
8 slices bacon, diced
12 oz boneless, skinless chicken breasts, diced in bite-sized pieces
salt and pepper
1 tablespoon butter
1 tablespoon olive oil
1 cup long grain white rice
2 cups water
1 teaspoon salt
1 cup onion, diced
12 oz (about 4 cups) broccoli florets, roughly chopped into small, bite-sized pieces
2-4 cloves garlic, minced
2 (10-oz) cans Ro-Tel Diced Tomatoes and Green Chiles
2 tablespoons butter
2 tablespoons flour
1 cup chicken broth
1 cup extra sharp shredded cheddar cheese
½ teaspoon salt and pepper, each
