How would you like to have SHRIMP for dinner? How about shrimp that doesn’t come from a Chinese restaurant and isn’t FRIED!!!!
I found this recipe for Cajun Shrimp and Rice on foodnetwork.com and it sounds great. And the best part, it doesn’t take long to make either!
It calls for Cajun seasoning, shrimp, plum tomatoes, scallions…read thru the directions first to make sure you have all ingredients. And your meal would be READY in under 10 minutes.
Here’s what you need:
1 tablespoon unsalted butter
2 tablespoons extra-virgin olive oil
3 cloves garlic, minced
2 teaspoons Cajun seasoning
1 pound large shrimp, peeled and deveined, tails intact
Kosher salt and freshly ground pepper
4 plum tomatoes, chopped
2 bunches scallions, chopped
3 cups cooked white rice
3 tablespoons chopped fresh parsley
Lemon wedges, for serving (optional)
