I really hate having to do a lot of dishes, so when I see ONE POT EASY recipes, I always give them a try! Gnocchi’s are one of my favorite dishes so this recipe had me intrigued. Loving cheeseburgers added to my excitement for this recipe to turn out well, and it did work out well.
This dish turned into a family favorite after the first serving and we had no left overs, so it wasn’t’ long before we made it again. It’s just such a great tasting and easy dish that I’m sure you will just love! The ingredients all give your nose a treat and even though it tells you can use water instead of chicken broth, I wouldn’t, because the broth adds so much to the taste, it makes it wonderful. You could probably use any kind of pasta too, but gnocchi’s are so good, it really is a dish that is made for the gnocchi. Give it a try.
Here’s what you need:
1 tablespoon butter
1 (16 oz) package potato gnocchi
1/2 lb lean ground beef
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cumin
1/2 teaspoon smoked paprika
1 teaspoon mustard powder (optional)
2 cups diced onion (about 1 whole onion)
3-4 cloves garlic, minced
1 (10-oz) can Ro-Tel Diced Tomatoes and Green Chiles
1 cup beef broth (or water)
1/4 cup heavy cream
1 cup shredded sharp cheddar cheese
1/3 cup thinly sliced scallions
