I just noticed I have a TON of apples lying around. There was a great sale at the market and I may have gotten a bit carried away. So needless to say, I have been looking into recipes that had apples as an ingredient lately, and when I found this Apple Pie Panini, I just thought, wow how clever!
Then I made it, and oh my goodness, it was delicious! The dessert involves using honey-whipped mascarpone, green apple slices and raisin bread topped with brown sugar. These panini’s are so easy to make and they fill your kitchen with incredible scents. Depending on how many people live with you, you may want to double or triple the ingredients because they are going to be devoured. This recipe will definitely end up in your permanent files. Take it from me, I’m now running LOW on apples.
Here’s what you need:
1/2 cup mascarpone cheese
2 teaspoons honey
4 tablespoons (1/2 stick) butter, at room temperature
8 slices cinnamon raisin bread, sliced from a dense a bakery loaf
1 Granny Smith or other firm apple, cored and thinly sliced
2 Tablespoons light brown sugar
Vanilla bean ice cream (optional)
