Soon it will be time to BBQ outside, and what does EVERY BBQ need? Salads! Well, I have found this Summer Fig and Watermelon Salad with Feta for you to try at your next cookout. It’s NOT your typical salad. It has cubed watermelon, stemmed figs and crumbled feta cheese and other ingredients (you can also add some sunflower seeds or walnuts). Here is what you’ll need to make Summer Fig and Watermelon Salad with Feta:
2 cups cubed seedless watermelon1/2 cup thinly vertically sliced red onion2 large fresh Calimyrna or other green-skinned figs, stemmed2 large fresh Brown Turkey, Black Mission, or Striped Tiger figs, stemmed1 ounce crumbled feta cheese (about 1/4 cup)1 tablespoon olive oil1 teaspoon lemon juice1 teaspoon honey1 tablespoon chopped fresh mint1 tablespoon chopped fresh basil2 tablespoons balsamic glaze1/4 teaspoon coarse sea salt1/4 teaspoon freshly ground black pepper
