I just LOVE shrimp! I just can’t get enough of it! Boy, do I love this dish “Asian Zucchini Noodle Stir-Fry with Shrimp”. The zucchini noodles are so easy to make, all you have to do is buy a “VEGGETTI”, it turns your veggies into HEALTHY spaghetti…and it’s great. This dish was posted by Kelly Senyei on justataste.com, though, this recipe probably came out before veggetti did, but buy it because it will make your life much easier. But one word of advice! DON’T PUT THE VEGGETTI IN THE DISH WASHER, I found that out the HARD WAY!!
Here is what you’ll need to make Asian Zucchini Noodle Stir-Fry:
1/2 cup chicken or vegetable broth
1/4 cup hoisin sauce
1 Tablespoon low sodium soy sauce
2 teaspoons cornstarch
3 Tablespoons olive oil, divided
1 Tablespoon minced garlic
1 teaspoon minced fresh ginger
1 pound jumbo shrimp, shelled and deveined
1 medium bell pepper, sliced
1/2 cup shredded carrots
2/3 cup sliced red onions
1 cup sugar snap peas
2 medium zucchini, cut into noodles (See Kelly’s Note)
Toasted sesame seeds, for garnish
