Who doesn’t like pancakes? For me, when they’re made with fruit inside and out, there’s nothing better-tasting for breakfast. And these griddle wonders, adapted by Jennifer Segal over at OnceUponAChef.com from a CHILDREN’S recipe book no less, are made with my favorite fruit – bananas! And the secret ingredient, vanilla extract, makes this version pretty much perfect. Bananaaaa plus vanillaaa = nirvanaaaa!!!!
Here’s the ingredient list for the most delicious Banana Pancakes you’ll ever eat:
- 1-1/2 cups all purpose flour, spooned into measuring cup and leveled off
- 2 tablespoons sugar
- 2-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 small, over-ripe banana, peeled (the browner, the better)
- 1 cup plus 2 tablespoons low fat milk
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 3 tablespoons unsalted butter, melted
- Vegetable oil
- Unsalted butter
- Maple syrup
- Sliced bananas
- Confectioners’ sugar (optional)
