If you are looking for a healthy dish that is also really easy to make, why don’t you try to make this dish, “Balsamic Roasted Vegetables”, it’s so tasty! It also comes to you straight from Weight Watchers, so you know its gonna be not only good, but good FOR you too. Mix everything EXCEPT THE TOMATOES together, then place mixture on two (2) baking sheets. When the vegetables are done, place the tomatoes on top of mixture and bake another 10 minutes. It make a great summer side dish to whatever you’re making, whether its chicken, fish and even steak. You can even eat it on its own if you would prefer. Do whatever you like!

4 spray(s) cooking spray
3 Tbsp balsamic vinegar
2 Tbsp olive oil
4 clove(s) (medium) garlic clove(s), minced
1 Tbsp fresh oregano, leaves, chopped
1 tsp rosemary, chopped
1/2 tsp table salt
1/4 tsp black pepper
2 medium uncooked zucchini, cut into 1-in chunks
2 medium eggplant(s), cut into 1-in chunks
2 cup(s) grape tomatoes
2 Tbsp basil, fresh, chopped
