Sweet potatoes are the perfect side dish for your holiday meal and my latest search found this great recipe for sorghum sweet potatoes. If you’ve never used sorghum before and/or even aren’t sure what it is (and I don’t blame you, I had to look it up too!) it’s basically a kind of molasses made from grains, and it’s also a BIG sweetener in the South.
I’m not sure if all grocery stores carry it, but I always find it at Walmart, and it’s not bad price wise. If you have trouble finding it, however, since it’s basically just molasses, you could even just use some standard everyday molasses as a substitute. It’s just fun to try different ingredients when you’re trying new recipes, so I would suggest tracking down the real stuff if you can.
I love finding new flavors and tastes. You use apple cider and Dijon mustard in this recipe too, plus my favorite– candied pecans! The recipe really makes a great and festive side dish, so give it a try this Christmas!
Here’s what you need:
6 medium sweet potatoes
1¼ c. fresh apple cider
½ c. sorghum
3 tbsp. butter
2 tsp. whole-grain Dijon mustard
2 tsp. apple cider vinegar
½ tsp. Kosher salt
½ tsp. ground cinnamon
¾ c. candied or spiced pecans
