I’m always on the look out for new chicken recipes and this one is one I think will become a favorite for many of us. It might look a little strange, but this isn’t called the “General Tso’s of India” for nothing!
This recipe is for Butter Chicken and it is a MASSIVE hit across the pond. I’m sure most of you have never heard of it, and even less have even tried it, but it’s a wonderful dish that uses a big variety of ingredients, some that you may have, but many you’ll probably need to buy. Either way, believe me, it’s worth it!
It does take some time to put this meal together, including the fact that the chicken needs to marinade at first for about a night. Once done though, you get a chicken that is moist and so flavorful, your family and friends will be amazed and insist that you ordered out. Give it a try and I guarantee you will make it again and again!
Here’s what you need:
1 ½ cups full-fat Greek yogurt
2 tablespoons lemon juice
1 ½ tablespoons ground turmeric
2 tablespoons garam masala
2 tablespoons ground cumin
3 pounds chicken thighs, on the bone
¼ pound unsalted butter
4 teaspoons neutral oil, like vegetable or canola oil
2 medium-size yellow onions, peeled and diced
4 cloves garlic, peeled and minced
3 tablespoons fresh ginger, peeled and grated or finely diced
1 tablespoon cumin seeds
1 cinnamon stick
2 medium-size tomatoes, diced
2 red chiles, like Anaheim, or 1 jalapeño pepper, seeded and diced
Kosher salt to taste
⅔ cup chicken stock, low-sodium or homemade
1 ½ cups cream
1 ½ teaspoons tomato paste
3 tablespoons ground almonds, or finely chopped almonds
½ bunch cilantro leaves, stems removed.
