I have a dinner party coming up in a couple of weeks and I’ve decided on a chicken dish that I’ve made before. It’s been a while since I made it, but I remember it being a big hit! What I love about it is how nice of a dish it makes. It’s really a great presentation that will delight everyone.
It’s nice to work with chicken breasts on the grill because they get such a great flavor and moistness that doesn’t compare to just baking. When everything’s is done you layer your platter with the chicken, sliced tomatoes and slices of mozzarella. Then add the corn mixture on top along with any juices and by this time your mouth will be watering. I just think it’s a beautiful dish with so much color and texture, it will dazzle your guests! Oh yeah, and it tastes GREAT too! You can’t lose with this dish.
Here’s what you need:
1 tbsp. red wine vinegar
3 tbsp. plus 2 tsp. olive oil
kosher salt
black pepper
1 small shallot, finely chopped
1 c. corn kernels (from 1 large ear, or frozen and thawed)
1 pt. mixed-color grape or cherry tomatoes, halved
4 6-oz. boneless, skinless, chicken breasts
2 lb. mixed-color medium and large tomatoes, sliced
1/4 c. small fresh basil leaves
