I spend a lot of time every week looking for new and exciting recipes of all kinds. This is a recipe that came up a few times during my journey. I kept going back to it because the photos made these peppers look so delicious!
I’ve had stuffed bell peppers in restaurants and from the stores, but I have never made them on my own. If you love peppers I recommend that you try this recipe as soon as you get a chance. It’s really a very simple meal to make, using the bell peppers, poblano chile peppers, pork and all the other ingredients will make your kitchen smell wonderful. The dish will take you less than an hour to complete and it’ll grow to be a favorite.
Here’s what you need:
3 tablespoons extra-virgin olive oil
1 pound assorted baby bell peppers (about 24)
1 small onion, diced
1 poblano chile pepper, seeded and diced
3 cloves garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon ancho chile powder
1 teaspoon chipotle chile powder
Kosher salt
1/2 pound ground pork
1/4 cup chopped fresh cilantro
3 ounces muenster cheese, diced (about 3/4 cup)
Lime wedges, for serving
