For those of you out there who are constantly watching your diet but always on the lookout for food they will actually WANT to eat, try this delicious Baked Ziti with Summer Squash recipe that I came across in the Weight Watchers: Cook it Fast Cookbook.
The toughest thing about diets is finding the right food. I mean, who needs to suffer and starve themselves and deprive themselves of meals they might actually enjoy? So any time I find something healthy, I need to make sure it tastes good too, or else, there’s just no point! This is one such dish…
Here’s what you need:
4 oz uncooked whole wheat pasta, ziti or penne (2 cups)
2 tsp olive oil
1 medium yellow summer squash, thinly sliced
1 small uncooked zucchini, thinly sliced
2 clove(s) garlic clove(s), minced
2 cup(s) home made marinara sauce
2 cup(s) fat-free ricotta cheese
1 cup(s) shredded fat free mozzarella cheese
This dish has summer squash and zucchini; gets cooked for 6 minutes; then gets the ziti and marinara sauce with the ricotta and mozzarella…you put EVERYTHING together…cook till it’s bubbling. Then serve with an added salad and your meal is complete!
