Once a week the kids and I like to do movie night and I always try to make something special and new to make it a great night. The last time I decided on nachos. This recipe I found is really quite good and you can use any meat you choose or even make it vegetarian by using portebello mushrooms, so it’s really flexible. My choice this time was to use chicken breasts, plus I used my favorite tortilla chips, salsa, and guacamole, but if you feel adventurous go ahead and make everything homemade, it’ll be worth it. Here’s what you need:
3 boneless skinless chicken breasts
1 lb shredded cheese
1 can black beans
1 bag of tortilla chips
1 10 oz sour cream
2 cups guacamole
2 fresh diced jalapenos
2 cups shredded lettuce
1 diced tomato
1/4 diced onion
2 cups salsa or
1 large cookie sheet

Nachos, to me, were always cheese and tomatoes with some black olive slices on top (a family recipe we would make every New Year’s Eve, something of a tradition) But there is nothing wrong with broadening one’s horizons.
